The secret of the products is the milk of the area, processed in such a way as to preserve its taste and qualities, all natural, tasty and healthy. The specific taste of Tudia dairies is therefore due to the milk collected from hundreds of households and farms in Bucovina. Having quality milk allows us to use traditional processes – such as making cheese from unpasteurized milk.
This is the explanation of the taste of "Tudia" different from the taste of the same varieties on the market, which use pasteurized milk. We prefer heat treatment by scalding the curd, because pasteurization practically destroys the milk flora beneficial to health, which we do not want. Because of this, our products are more natural and healthier, but have a shorter shelf life.
