One of the reasons why Romanian food is so loved is the speed of its preparation and the preservation, at the same time, of its delicious taste. Romanians are extremely resourceful people and with a few basic ingredients they have in the fridge they manage to prepare a delicious lunch or dinner.

Time is extremely precious for all of us and unfortunately we often lose track of it. Many times it happens that we get home after a long day at work, we are hungry, but we don't have the mood to spend a few hours in the kitchen. Precisely for this reason, I have prepared a selection of 5 Romanian dishes that you can make quickly.

Chicken soup with dumplings
Chicken soup with dumplings is ready in about 40 minutes. Its taste will surely remind you of your childhood because our grandmothers used to make it frequently, especially when children were suffering from a cold or flu.
Ingredients needed:
- a chicken
- 2 carrots
- 1 bunch of green onions
- a parsley root
- 1-2 peppers
- a small celery
- a parsnip
- 50 g
- 1 bunch green parsley
- 2 cloves of green garlic
- high
- peppercorns and ground
For dumplings
- 2 eggs
- 100 g griș
Method of preparation:
Wash the chicken in some water and singe it for 2-3 minutes on high heat. It is passed through a stream of cold water and boiled in water with a pinch of salt.
Take the foam, and after it starts to boil, add the pre-cleaned and washed vegetables.
Cover the soup with a lid and let it boil over medium heat. After they have cooked the chicken and the vegetables, they are removed in a sieve. Set aside the onion, garlic and egg whites. Cut the carrot into rounds and put it in the soup.
Beat the eggs, gradually add the semolina and form the composition for the dumplings. After boiling the soup for a few minutes, beat the eggs and mix with the semolina, form the dumplings and let them swell in the soup. At the end, add the butter, salt and pepper.
Dumpling soup is eaten at any time of the day, warm and with greens sprinkled on top.
Fish with tomato sauce
Fish with tomato sauce is a very simple and very quick recipe, and the taste is unmistakable. This recipe is ready in about an hour.
Ingredients needed:
- a few sprigs of parsley
- 2 tablespoons of oil
- 1 bell pepper
- 2 onions
- 2 tablespoons broth
- 1 kg cherry tomatoes
- 3-4 fish
- high
Method of preparation:
Onions and peppers are cut into small cubes that are put to temper in oil, after which they are sprinkled with a pinch of salt.
Cut the tomatoes as small as possible and add them. Leave it for 10 minutes to release the water and then add the opened broth with a little water. Leave to boil for another 10 minutes.
Put the fish cleaned of head and tail, even fillets if possible, and let it boil in this vegetable sauce for 10 minutes.
Serve with parsley.
Mashed beans
Mashed beans are an appetizer that is prepared in all areas of Romania. Its taste instantly reminds you of your mother's or grandmother's kitchen and it is very easy to prepare. The cooking time of this dish is approximately one hour.
Ingredients needed:
- 1 pepper
- 1 carrot
- 1 piece of celery
- 1/2 bunch of dill
- 3 cloves of garlic
- oil
- 1 teaspoon of paprika
- tomato paste
- 1 sprig of thyme
- 2 bay leaves

- 2 onions
- 500 g of beans
Method of preparation:
Wash the beans and boil them in a pot of water. After boiling for a few minutes, discard the water and boil again in another water.
Chop the carrot, pepper and celery and put them in the pot with the beans, adding the bay leaves and the sprig of thyme.
After the beans are cooked, remove from heat and puree with an upright blender. Season with salt and chopped dill and place in a Pyrex bowl.
Separately, fry finely chopped onion and garlic. Add sweet paprika and a little tomato paste. Sprinkle over the beaten beans and serve both warm and cold.
Rustic potatoes
Rustic potatoes are a delicious and filling side dish that you can combine with meat products. Their preparation time is 50 minutes.
Ingredients needed:

- 150 g
- 5 large potatoes
Method of preparation:
Wash the potatoes very well and boil them in their skins. After they have boiled, they are cleaned and cut into large cubes.
Melt the butter in a large pan, add the oil and put the potatoes. Let it brown on all sides, about 15 minutes. Sprinkle salt and finely chopped dill. It is consumed on the spot.
Chicken rolls
Chicken rolls are a very simple dish that can get you out of trouble all the time. Preparation time is 35-40 minutes.
Ingredients needed:
- salt and pepper
- oil
- 1 bunch of parsley
- sweet mustard
- 1 boneless chicken breast
- pressed cheese
Method of preparation:
The chicken breast is cut and pounded with a mallet, so as to obtain not very thick slices that are sprinkled with salt and pepper.
Mix the mustard (a teaspoon for each roll) with the chopped parsley and rub the meat on the inside with this mixture.
Roll and fasten the rolls with toothpicks. Fry them in hot oil, then add the cheese and remove them on paper towels. It is consumed immediately.
Macaroni and cheese pudding
There is no one who does not remember the delicious macaroni and cheese. Over time the recipe has changed and improved, it has been supplemented with raisins, vanilla essence or rum, but nothing compares to the original taste. Here's how it's prepared and what you need:
Ingredients needed:
- 450 g pasta
- 450 g cottage cheese
- 3-4 eggs
- 120 g of butter
- a pinch of salt
- 4 tablespoons of caster sugar
Method of preparation:
Boil the macaroni according to the instructions on the package. Divide the butter into 2 equal parts. Leave half to melt, with half you will line the pan later.
When the pasta is almost ready (al dente, you don't have to let it boil all the way through), drain the water and run it through a stream of cold water. Preheat the oven.
Beat the eggs well and combine them with the melted butter and the rest of the ingredients. Mix everything with the macaroni.
Line the pan with butter. Pour the mixture evenly into the pan.
Place in the preheated oven at high temperature for 30-40 minutes.
Optionally, you can also sprinkle sugar on top, to form a sweet, brown and crunchy crust.
'Radauțean' soup
'Radăuțean' soup looks similar to beef stripe soup, but it is much easier and faster to prepare, and also extremely tasty. Here's how you can have the tastiest Romanian soup in an hour:
Ingredients needed:
- 1 and 1/2 chicken
- 3 carrots
- 3 onions
- 1 medium celery
- high

- 3 egg yolks
- 250 g cream
For serving
- sour cream
- pepper
Method of preparation:
We start the preparation of the Radăuțean soup. The portioned chicken meat is boiled in cold water with salt and, from the moment it starts to boil, skim off the foam whenever it appears.
In the meantime, clean and chop the vegetables smaller and then, after the foam disappears, add them to the pot with the chicken pieces.
Let everything boil until the meat and vegetables are soaked. Then, the meat is removed and left to cool a little, the vegetables can be used for any other culinary preparation, and the juice is strained.
The strained juice is put back into the pot and thickened with the cream mixed with egg yolks.
We have very little left until we finish cooking the Rădăuțean soup. Now cut the chicken into thin strips and add to the pot. It is left to boil for one more time, and the dish is ready.
Polenta with cheese
(Polenta) 'Mămăliga' with cheese is a dish loved by every Romanian. Words cannot describe its taste, so I'll just tell you that it can be ready in 40 minutes. Here's how:
Ingredients needed:
- 1 cucumber
- 200 g fresh cheese
- 50 g telemea cheese or cheese
- 2 green onions
- 1/2 bunch of dill
- a few sprigs of parsley
- 1 bundle of radishes
For the polenta
- 200 g of corn flour ('malai')
- 800 ml vegetable soup (1 l water, 2 carrots, 1 parsnip, a small celery, salt)
- 1 pinch of thyme
- 70 g parmesan cheese
- butter or oil for frying
Method of preparation:
Put the soup on the fire in a cauldron or a pot with a thicker bottom. Add the thyme and a spoonful of cornstarch and let it boil. After the first boils, pour the cream into the rain and mix continuously with a wooden spoon. Take the polenta with the back of the spoon from the outside to the inside and mix until it binds and is well cooked. At the end, add the parmesan, let it boil a few more and turn it over.
For the cream cheese, mash the fresh cheese with the grated telemea, green onion, dill and parsley, all finely chopped. Season to taste with salt and place on cucumber slices. Garnish with radishes and serve with roasted polenta.
The cold mămăliguța is cut into slices, fried in butter or oil and decorated.
