Sour Cherry Jam with Walnuts - Razvan Idicel - 380g

It's the beginning of summer, and the sour cherries are ripe. Dark red, tart, with that vivid taste that fills your mouth all at once. That's exactly when we pick them. That's exactly when they go into the cauldron, along with the walnut kernels we've cracked ourselves.

This isn't a store-bought cherry jam with walnuts, made with diluted fruit and artificial flavors. This is the jam you remember from jars made in the summer, in the backyard, when the sour cherries were at their peak. Simple, unhurried.

We use 65% ripe sour cherries, slow-cooked in their own juice with carefully measured sugar, just enough to support the fruit's flavor without overpowering it. The walnut kernels (5%), cracked by us, go into the cauldron and add exactly what's needed: texture, roundness, a warm note that balances the acidity of the sour cherries. Everything is cooked over a wood fire in our yard in Idicel Pădure, Transylvania. No artificial colors, no additives, no preservatives.

This jam isn't overly sweet. It's tart, vibrant, with the pure taste of sour cherry in the foreground and the walnut subtly present in the background. The taste varies slightly from batch to batch, depending on how the fruit was that year. If you prefer a uniform and very sweet jam, ours is not for you. If you love the true taste of ripe sour cherry with walnuts, cooked with patience. Open a jar and spread it on a slice of homemade bread.
